Cuban Pork Roast


Cuban pork roast or Puerco Asado is a popular dish in Cuba prepared on special occasions.
The pig is roasted on a stick above a pit with charcoal.
The Cuban pork is usually served with black beans and rice (Moros y Cristianos). Suckling pig in Spanish Lechón Asado , slaughered between 4-6 weeks is traditionally roasted whole and the meat is very tender. The Lechón asado is a meal for festive occasions like Chrismas and New Year.
